Fall is in the Air so Let’s Bake

Fall is in the air so let’s bake. When The air starts to feel crisper and you can smell fall ( you know that clean, cold smell. That has a hint of leaves and fireplace). That is the perfect time to start thinking about all the fall baking you can do. There are so many delicious fall recipes. Apple cakes using maple and brown sugar. Appel crisps toasty and warm right out of the oven as they bubble and give off cinnamon and ginger smells. Pumpkin pie with its creamy texture and flaky crust.

Fall is in the air let’s bake:

One of my favorite super easy and tasty thing to make is pumpkin, maple, dried cranberry muffins, or bread. You can make both from the same recipe. I love the pumpkin, maple, and ginger smell that waft from the oven as it is baking. These muffins are great for a breakfast treat, mid-day snack, or on-the-go filer up. They are perfect for grabbing and going. These muffins are delicious heated with a smidge of butter. You could even make some homemade maple butter. If you are making these for your children you could even sneak in some veggies in the recipe. Always a good way to fortify your kids.

One other great thing about this recipe is you can do substitutions. You can substitute apple sauce for eggs, use gluten-free flour. Use more maple syrup and less brown sugar if you are trying to use less processed sugars. There are other items you can add to this recipe.

If you like nuts you could add them in. In addition to cranberries, you can add raisins. Chocolate chips would be super tasty in it. oh, I could go on for hours with different ways to make them. I will stop here and start sharing the recipe. One quick note I saved half the batter to make more in a few days. Cover the bowl and stick it in the fridge. Recipe

Ingredients:

2 Cups Flour

1/4 Teaspoon Ground Cinnamon

1 Cup Pumpkin Puree

2 Eggs

1/4 Cup Maple Syrup

1/2 Teaspoon Salt

1/4 Teaspoon Ground Ginger

1/4 Cup Brown Sugar

1 Cup Dried Cranberries

1/4 Cup Vegetable Oil

1/2 Teaspoon Baking Soda

1/4 Cup Water

Directions

Preheat the oven to 375 degrees. Get our medium-sized bowl. Add together all the wet ingredients. Eggs, maple syrup, vegetable oil, pumpkin, and water. mix them all well. After adding all the dry ingredients flour, brown sugar, ginger, cinnamon, salt, and baking soda. Making sure there is no flour left on the bottom or sides of the bowl by mixing the batter well. Add the cranberries and mix the batter.

Grease the muffin tin. Then add the mix 3/4 of the way up each muffin tin. Put in the oven for 30 minutes. Once the Timer goes off stick either a fork or toothpick in the middle of one of the muffins. If the toothpick or fork comes out clean the muffins are done. if not put them back in the oven for another 5 minutes and once again check. When the muffins are done let them cool and enjoy!
